Sardines With Coriander

Sardines With Coriander
Serves 4
  • 12-16 large fresh sardines
  • olive oil for brushing
  • salt and black pepper
  • lime wedges and flat-leaf parsley sprigs to garnish
CORIAND},'R LIME BUTTER
  • 1 tsp ground coriander
  • 4 tbsp unsalted butter, at room temperature
  • 1 1/2 tsp lime juice
  • 1 shallot, finely chopped
  • 1/4 tsp finely grated lime zest

STEPS :

  1. Scale the sardines with the back of a kitchen knife. With a sharp knife, cut the stomachs open and scrape out the contents, particul~rly any dark blood.
  2. Rinse the sardines inside and out and pat dry. Brush all over with oil and sprinkle with salt and pepper.
  3. Prepare the coriander lime butter: heat a heavy pan, add the coriander, and toast lightly. Transfer the coriander to a bowl and leave to cool slightly.
  4. Add the butter and lime juice to the coriander and whisk until thick. Stir in the shallot and lime zest and salt and pepper to taste.
  5. Place the sardines under . the broiler, 4 in (10 cm) from the heat, and grill for 1 1/2 -2 minutes on each side until they begin to feel firm.
  6. Transfer the sardines to a platter, and spread a little coriander lime butter on each one. Garnish with lime wedges and flat-leaf parsley sprigs, and serve immediately.
