Cheese & Olive Bites

Cheese & Olive Bites
Serves 4
  • 1 1/2 cups (175 g) grated aged Cheddar cheese
  • 2/3 cup (90 g) all-purpose flour
  • 1 tbsp butter, plus extra for greasing
  • 1 tsp paprika
  • 1/2 tsp dry mustard
  • 20 pimiento-stuffed green olives
  • cayenne pepper and parsley
  • sprigs to garnish

STEPS :

  1. Work the cheese, flour, butter, paprika, and dry mustard in a food processor until the mixture resembles fine bread crumbs.
  2. Flatten the dough mixture, and wrap around the olives.
  3. Butter a baking sheet. Place the wrapped olives on the baking sheet and bake in a 400癋 (200癈) oven for 15 minutes, until the pastry is golden.
  4. Remove the cheese and olive bites from the baking tray and leave to cool slightly.
  5. Serve warm or cooled, sprinkled with cayenne pepper and garnished with parsley sprigs.

Take a thumb-sized piece of the dough mixture and flatten on a work surface.

Bouillabaisse

Place an olive in the middle of the dough. Wrap the dough around the olive, pressing to make it stick. If the pastry is too crumbly and will not stick, add a little water. Repeat with the remaining dough and olives.
