Salmon With Spinach

Serves 4
Salmon With Spinach
  • 4 6-oz (175-g) salmon steaks
  • salt and black pepper
  • 1 tbsp butter
  • lemon twists to garnish
SPINACH SALSA
  • 2 tbsp olive oil
  • 8 scallions, finely sliced
  • 1 garlic clove, crushed
  • 1/4 cup (60 ml) lemon juice
  • 1 tsp coarse mustard
  • 1 lb (500 g) spinach, finely chopped

STEPS :

  1. Season the salmon steaks with black pepper and dot with the butter.
  2. Cook the salmon steaks under the broiler, 3 in (7 cm) from the heat, for 5-6 minutes on each side, until the fish is opaque and the flesh flakes easily.
  3. Meanwhile, make the spinach salsa: heat the oil in a skillet, add the scallions and garlic, and cook, stirring, for about 1 minute. Stir in the lemon juice, mustard, and spinach, and cook, stirring, for about 2 minutes. Transfer to a bowl and season with salt and pepper to taste.
  4. Garnish the salmon with lemon twists and serve immediately, with the salsa.
