Cheese Puffs

Cheese Puffs
Serves 10 - 12
  • 1 1/4 cups (300 ml) water
  • 4 tbsp butter
  • 1 cup (125 g) self-rising flour
  • 2 egg yolks
  • 2 eggs
  • 1 cup (125 g) grated aged Cheddar cheese
  • salt and black pepper
  • oil jar deepfrying

STEPS :

  1. Put the water and butter into a saucepan and bring to a boil. Remove from the heat and add the flour. Beat well until the mixture is smooth and glossy and leaves the side of the pan clean. Leave to cool slightly.
  2. In a bowl, lightly mix the yolks and eggs, then beat into the flour mixture a little at a time. Stir in the cheese. Add salt and pepper to taste.
  3. Heat the oil to 375癋 (l90癈). Lower the mixture a teaspoonful at a time into the oil and cook very gently until golden brown. Lift out and drain on paper towels. Serve warm.
